Colourful Pasta Salad

Ingredients

  • 200 g cocktail bocconcini
  • 1 tsp Herbamare® Original organic herb sea salt
  • 1 tbsp olive oil
  • 3 cups dry gemelli pasta
  • 225 g asparagus, chopped
  • 12 mixed cherry tomatoes, halved
  • 1/2 small red onion, sliced
  • 1 yellow pepper, diced
  • 2 tbsp fresh basil, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon zest
  • 1 tbsp whole-grain mustard
  • 2 tsp minced garlic
  • 1 tsp Herbamare® Original

Directions

  1. Toss bocconcini with Herbamare and olive oil; marinate 15 min (chilled).
  2. Cook pasta in salted boiling water; add asparagus halfway. Drain and cool.
  3. Whisk dressing in a large bowl.
  4. Add pasta, asparagus, tomatoes, onion, pepper, and bocconcini; toss.
  5. Top with basil before serving.
